Asia’s Food Capital Attracts Culinary Legends

Singapore’s celebrated dining experience is set to reach new heights this year as ten of the world’s top chefs have been drawn to its shores to open their own restaurants, representing a Who’s Who of epicurean excellence.

The incontrovertible culinary capital of Asia, Singapore sets the standards when it comes to innovation, flair and world-class cooking. With a global reputation for its multi-cultural local fare, the city state attracts some of the most celebrated chefs on the planet to its annual World Gourmet Summit. Now, with the opening of ten celebrity chef restaurants, the Singapore dining scene will undergo a further gastro revolution. From haute cuisine to nouvelle chinoise, eclectic Australian to perfect pizza, there’s something to tantalise everyone’s taste buds.

2010 sees the launch of two spectacular integrated resorts, Marina Bay Sands – officially opening on 27th April – and Resorts World Sentosa in Singapore, both offering a spectrum of delicious dining experiences from a stellar cast of master chefs from around the globe. The new fine dining experiences will include not one, but three restaurants from the world’s most Michelin-star decorated chef, Joël Robuchon. Debuting in Singapore in May and featuring his legendary French haute cuisine will be Joël Robuchon Fine Dining, L’Atelier de Joël Robuchon and The Pastry Shop & Lounge, at Resorts World Sentosa’s FestiveWalk waterfront. The first and only chef to be titled ‘Chef of the Century’, Joël Robuchon currently lays claim to 20 dining establishments worldwide.

Three other star chefs, Kunio Tokuoka (Kyoto), Scott Webster (New South Wales) and Susur Lee (Washington, New York and Toronto) will also be opening their restaurants at Resorts World Sentosa: Four Michelin-star chef Kunio Tokuoka will launch Kunio, his first restaurant outside Japan in the all-suite hotel, Crockfords Tower; Scott Webster is re-inventing his famous London restaurant Osia, also in Crockfords Tower, while Susur Lee has teamed up with the Tung Lok Group to open Chinois by Susur Lee in Resorts World Sentosa’s boutique Hotel Michael.

A further six celebrity chefs will be creating culinary magic with their first restaurants in Singapore opening at Marina Bay Sands: Mario Batali (New York), Daniel Boulud (New York), Wolfgang Puck (Los Angeles), Santi Santamaria (Barcelona), Guy Savoy (Paris) and Tetsuya Wakuda (Sydney). The celebrated chefs will draw inspiration from the kitchens of their own restaurants, while creating menus that incorporate regional products and local produce. Each chef will bring to Singapore experienced members from his own restaurant and will develop a new generation of local chefs as they work alongside the industry’s best.

Gourmet restaurant, 1861, is delighted to be hosting a special dinner on May 12, featuring the highly acclaimed wines of top South African estate Paul Cluver.

The dinner will attended by Liesl Rust, member of the Cluver family, who is in the UK to collect a clutch of awards scooped by the estate at the international wine awards in London.

“It’s an absolute coup for us to have secured this exclusive visit from the Cluver estate,” says 1861 chef/proprietor, Simon King. “We have been trying to secure a visit for more than two years.”

“The Cluver estate wines are among the very best that South Africa has to offer, and their wines are highly prized throughout the world,” he adds.

“ Liesl Rust will be able to give us a fascinating insight into what goes into producing some of the world’s top wines.”

Simon has devised an exclusive menu for the night that includes:

Simon King opened 1861 three years ago having worked with the famed Roux brothers at The Waterside Inn, followed by a post as head chef at luxury country house hotel, Llansantffraed Court.

1861 celebrated its inclusion in the prestigious Michelin guide earlier this year.

The Paul Cluver estate is in the cool climate Elgin Valley and forms part of a World Heritage site called The Kogelberg Biosphere.

The family-run winery has roots that go back four generations. The estate’s wines are acclaimed world-wide for their elegance and finesse.

Southport Food and Drink Festival is getting ready for its fourth annual event, a true celebration of food and drink in Southport, across the town centre, from May 13-16th.

Event Highlights
Key elements of this year’s programme include:

• Celebrity Chefs
As part of the Festival, chefs from further afield and famous faces will descend on Southport to join the celebrations!

TV Chef Simon Rimmer will be taking to the Festival stage to share some of the delicious, creative, yet simple recipes that have made him a household name.
Simon will be on stage at 12-2pm, Friday 14th May.

Michelin-starred chef (the youngest ever to achieve such an honour), author and TV star Aiden Bryne will be presenting some of his inspiring, fine dining dishes.
Aiden will be on stage at 1pm, Saturday 15th May.

TV broadcaster, author and general beer expert Pete Brown, will be hosting a beer talk and tasting, based around his new book ‘Hops and Glory’.
Pete Brown will be on stage at 2pm, Saturday 15th May at Scarisbrick Hotel as part of the Southport Spring Beer Festival.

For the first time, Southport’s finest restaurants will take to the streets to provide a food court with a difference. Ten of the town’s best will be serving ‘Festival versions’ of their signature dishes over the four days, and best of all, each dish will only be £4 each – a restaurant experience at a ‘take-away’ price.

A Festival bar will be serving locally inspired drinks, and entertainment on the Town Hall Gardens to add to the festival atmosphere.

Local producers and retailers will offer diverse and high quality produce along Chapel Street, Lord Street and the Band Stand, Lord Street.

Local producers, retailers and food brands will be along Chapel Street, providing a chance to try and buy a wide variety of local fare including fudges, cheeses and ostrich burgers.

Italia in Piazza, Italian Markets, Band Stand, Lord Street
An authentic Italian market rolls into town for the first time this year, bringing with it a wide variety of delicious Italian produce from olive oil to pizza and sweets to wines. Plus a specialist Italian wine producer will be selling and sampling wine on the bandstand itself throughout the event, providing Southport with its own ‘Little Italy’!

Continental Markets, Lord Street
The whole of Lord Street will be transformed with a huge array of European producers and retailers.

A great range of events and special offers will also be taking place in the town’s best restaurants, bars, cafes and pubs. . Highlights include A Gourmet 5 Course Dinner at The Dining Rooms, a specialist Wine Festival at the Scarisbrick Hotel, and a ‘Taste of Europe’ weekend of changing activity at Lords Café.

• SOUTHPORT FOOD AND DRINK FESTIVAL GALA DINNER AND AWARDS IN ASSOCIATION WITH SOUTHPORT CHAMPION, 17th MAY, SCARISBRICK HOTEL
The first ever Southport Food and Drink Festival Gala Dinner and Awards Ceremony will take place this May 17th at iconic Southport venue, and Festival partner, The Scarisbrick Hotel. Run in association with The Southport Champion, the awards will provide a benchmark of quality in the town and will be voted for entirely by the public! Venues around Southport are currently collecting votes from their own customers, and the public can also vote now via the Southport Champion website (champnews.com).

Voting closes on 23rd April when the top five voted for in each category will be put into a shortlist and announced in the local media. Shortlisted venues will then be visited by a specially selected judging panel and winners of each category chosen.

Winners will only be announced at the Gala Dinner and Awards on 17th May held at Scarisbrick Hotel, so nominees must attend to find out if they are a well-deserved winner!

Dubble is the chocolate brand created just for children by Comic Relief and Divine Chocolate – and is 10 years old next month! To honour this tremendous milestone and to thank all its supporters including all the celebrity fans, Dubble is throwing a birthday party at London’s iconic Potters Field Park (metres from Tower Bridge and the Mayor of London’s seat, City Hall) over the weekend of 7 – 9 May. This three-day festival is free for all and promises to provide stacks of Fairtrade family fun with plenty of samples of delicious Dubble chocolate as well as Dubble’s magnificent birthday cake which will be cut by singer Mica Paris at 11.30am on Saturday 8th May. Dubble’s ten year history has been marked by huge celebrity support. Billy Connolly, Jack Dee, Tony Robinson, Jo Brand, JK Rowling, Graham Norton, Freema Agyeman, Tess Daly and many more have voiced their support for Dubble chocolate and its Fairtrade initiatives. In 2002 Blue Peter visited Ghana to report on Dubble and Fairtrade. In 2002 Samantha Mumba starred in an advert airing on Nickelodeon following a Dubble competition to design a Dubble advert. In 2006 Dubble Agents from the UK and two children of cocoa farmers in Ghana delivered a Chocolate Challenge manifesto to Hilary Benn MP, then Minister for International Development. Dubble really has an amazing story to celebrate!

For the past decade the overriding goal of Dubble has been to change the world chunk by chunk. It is a chocolate bar with a mission! The original Dubble chocolate bar combines smooth milk chocolate with a crispy-crunch and is still the only Fairtrade chocolate bar just for children (though adults love it too!). The Dubble bar was born following a nationwide competition announced by Jennifer Saunders on BBC TV asking schoolchildren to design a Fairtrade chocolate bar. The winning design became the Dubble bar we know today; the product of a partnership between Comic Relief and Divine Chocolate. Since the year 2000 the Dubble brand has been leading the way in bringing kids on board with Fairtrade.

As well as working together to create Fairtrade chocolate products for young people all year round (there’s lots of other choccy treats in the Dubble range), together with Comic Relief, Dubble has led the way in creating innovative ways for young people to engage with Fairtrade, including direct contact with their peers on the cocoa farms in Ghana. 50,000 young people have signed up as Dubble Agents who are hungry to change the world and are set Fairtrade challenges. A feast of west coast food, sold by the producers. Food from Argyll will be a prominent presence at the festival.
Alongside Loch Fyne Oysters’ own sea food stands, stalls include Winston Churchill Venison, Isabella's Preserves, Lambros Quality Foods, the Inverloch Cheese Company, Orkney Herrings, Barbreck Farms, Bumble Puddings, The Really Garlicky Company, Great Glen Game, Robin’s Herbs and Ayrshire Confections.
Ales will be supplied by Fyne Ales plus specially selected wines from Europe and Australia. There will be live music throughout both days and a music event on Saturday evening. Entertainment and activities for all ages.

ISLAY FESTIVAL OF MALT AND MUSIC

Feis Ile, the Islay Festival of Malt and Music, was founded by the local people of Islay in 1986 to celebrate the heritage and culture of Islay.
Since 2000 Feis Ile has been run in conjunction with the distilleries of Islay and Jura and Port Ellen Maltings. Each distillery has its own open day, putting on special events. Islay has a wealth of musical talent which is very much in evidence at the ceilidhs, while mainland artists are also brought to the island for the festival week.


TASTE OF EDINBURGH

The Taste of Edinburgh festival is an upmarket food and drink festival set in the beautiful outdoor surroundings of Inverleith Park. A celebration of Scottish food and drink, Taste of Edinburgh gives food lovers the chance to enjoy the best that Scottish restaurants, chefs, and food and drink producers have to offer. Festival-goers can sample dishes from Edinburgh’s top restaurants and enjoy food from the rising star chefs in Scotland, as well as the established Michelin-starred gurus. FOODIES AT THE FESTIVAL

Foodies at the Festival is one of the main food events at the Edinburgh festival, serving up popular food and drink master classes. Classes will be held in areas ranging from chocolate to speciality cheeses. There are more stalls than ever and a new area for hot food. There will also be a cafe-style seating area for visitors. A Chefs Theatre will show cookery demonstrations from top Scottish chefs.



ARBROATH SEA FEST
21 - 22 August
Arbroath, Angus
The annual Arbroath Sea Fest offers entertainment for all the family. The diverse programme varies from year to year but regular features include boat-dressing competitions, fishing displays, train displays and cookery demonstrations. Raft racing takes participants past the spectacular cliffs north of Arbroath. For those who enjoy a bit of retail therapy there is a wide range of stalls selling everything from fresh seafood to handmade jewellery, crafts and confectionery.
The star of the show is undoubtedly the Arbroath Smokie (haddock smoked over hardwood) but past years have also seen trout specialities, suckling pig, venison and ostrich all available from the Smokie Trail, comprising 70-odd stalls along the harbour.

CHICAGO - Jenn-Air, in partnership with Certified Master Kitchen and Bath Designer and NKBA Hall of Fame member Ellen Cheever, is proud to unveil the forward trend kitchen at the Kitchen & Bath Industry Show in Chicago on April 16th. A leading authority in the design world, Cheever has incorporated the new Jenn-Air® collection of super premium appliances into a kitchen design concept that spans generations. The Jenn-Air® kitchen, which will showcase Cheever's thoughtful execution of a universally usable kitchen, serves the evolving needs of a multi-generational family.

"Gone are the days of the kitchen being in the backdrop with a single user," notes Cheever. "The contemporary kitchen is central and demands purposeful design with universal functionality for multiple generations. The forward trend kitchen I've created with Jenn-Air is a space that balances high design with smart functionality to accommodate users at various life stages."

Beyond showcasing modern trends in kitchen layout and luxury appliances, Cheever's kitchen addresses a common problem in high-end kitchen design: seamlessly combining sleek contemporary or European styled cabinetry with American appliances.

"Because typical European metric-sized frameless cabinetry has a six-inch toe kick, and American appliances have a four-inch toe kick, it's often a challenge for designers to combine them in one kitchen and create the fully integrated look clients seek," said Cheever. "The Jenn-Air® kitchen will offer multiple examples of how this integration can be achieved."

To share this knowledge with more designers, Cheever and Jenn-Air are partnering to create a Continuing Education Course (CEU) that focuses on design instead of products. Scheduled to be released in the fall, the course will provide Cheever's learnings and advice for integrating American appliances with European-styled contemporary cabinetry, as well as creating a kitchen for multi-generational use.

"We are very excited to be a part of this groundbreaking continuing education class featuring one of the industry's foremost experts," said Juliet Johnson, manager of Jenn-Air brand experience. "Jenn-Air is committed to engaging and sharing useful information with the design community through a variety of channels that include on-site designer training programs, the Jenn-Air website and the currently available CEU courses already found on JennAir.com."

The kitchen will include a butler's pantry, custom appliance paneling, an entertaining center and a dining area with the latest Jenn-Air® appliances including the unique duct-free gas downdraft cooktop and wall oven with a 7-inch full color LCD screen and Culinary Center that guides users through the cooking process. Style options on display from the brand's offerings will include its Euro-Style stainless steel and unique Euro-Style Black Floating Glass.

Designed to serve an active family with a fun-filled, healthy and happy home life that centers on the kitchen as a gathering space, the kitchen provides an efficient space for one cook but has multiple work areas and room for friends and family to gather. Warming drawers are strategically located near the cooking area for the chef but close enough to the table for the servers. An advantageously placed ice maker doesn't require the host to make a long trip across the room to the refrigerator. Two island sinks provide both prep and clean-up water centers. Everyone can easily access chilled beverages with under counter refrigeration located near the dining table entrance to the pantry. The kitchen features an indoor work station housed in the pantry area with a pass through window to the outdoor area. Visibility and accessibility are key elements of this all-inclusive space and the room is designed to give the family a pleasant, quiet environment with a calming backdrop for the family's hectic life. An understated taupe, black, brown and cream color pallet is enhanced with interesting textures and patterns - and a splash of daring lime tinged green.

This summer The Bristol Wine & Food Fair will come to the heart of the city for the third consecutive year from Friday 2nd to Sunday 4th July 2010 on Bristol’s historic Harbourside. The three day event will offer enthusiasts the chance to sample, enjoy, learn and discover more about fine wine and good local produce.

Chris Scholes, Founder and Director of the fair, commended: “The Bristol Wine & Food Fair this year is going to be an even bigger and better event, which will appeal to everyone from the professional audience to families looking for a fun day out. Visitors will be able to educate their palates, try something new and discover new wine and food combinations. Come and join us for what will be one of the tasting highlights of the summer.”

At The Bristol Wine & Food Fair exhibitors will be able to showcase their produce to the best of the West, as well as those who will have travelled miles to attend from all over the country. More than 14,000 visitors are expected to be present at the event, which already has over thirty different wine importers and producers on board. In the Wine Producers & Importers Tasting Marquees these visitors will have the rare opportunity to taste, drink or buy a diverse range of wine styles.

The Wine & Food Tasting Lecture Theatre will be one of the main attractions, with some of the industry’s leading wine experts sharing their knowledge and love of wine. Susy Atkins, Charles Metcalfe, Fiona Beckett and Tim Atkin MW will be taking some of the master classes sharing their knowledge about different wine regions, wine styles and how to match wine with food. Over 18 specific tutored tasting lectures will be hosted, such as Charles Metcalfe’s “Wines of Portugal”, Tim Atkin’s “The Wines of New Zealand” and closing with the elegant partnership of “Champagne & Chocolate” with Sarah Jane Evans MW’s special master class.

As well as fine wines there will also be the Food & Drink Pavilion and the Food & Drink Producers Market. This year, visitors will be offered the extra delight of an International Dining Area showcasing different cuisines from around the world, allowing everyone to wander, find and indulge.

Food lovers can also attend the Chef’s Master Class Theatre. Free to all visitors, the theatre programme will contain some of the most passionate and committed chefs in the South West, including Freddie Bird (The Lido), Louise McCrimmon (Harvey Nichols), Mark Evans (Cafe Maitreya) and Chris Wicks (Bell’s Diner). Chris Scholes, said: “We are proud of the quality and individuality of the chefs we choose to perform in our Chef’s Theatre, this year our focus is on cookery education with the City of Bristol catering college assisting our chef’s performances”.

Also new for this year is the “Bristol Young Chef 2010” competition, organised in partnership with Bordeaux Quay Cookery School. The fair will be running an exciting free new competition to find the next Raymond Blanc, which will be open to all Bristol’s primary schools. Famous chefs will select the best young applicants to compete in a “cook off” on the Saturday morning of the event. The winners will get the opportunity to perform their recipes on-stage in the Chef’s Theatre on Sunday 4 July, assisted by the master chefs and win equipment vouchers for their schools and cookery courses for themselves.
The Bristol Wine & Food Fair will be set against the wonderful backdrop of Bristol’s historic harbour with live music on-stage to add to the festival atmosphere.
